Admiral Hotel Enters a New Era: The Copenhagen Landmark Completes Extensive Renovation

After years of renovation and development, Copenhagen's Admiral Hotel has completed the most extensive modernization in its history. Heritage intact, the 1787 warehouse has been reimagined with new culinary concepts, meeting and event venues, wellbeing spaces, and signature experiences.

Following a significant investment, Admiral Hotel has been reborn. The former warehouse, now a luxury hotel on Copenhagen's harborfront, has completed one of the most significant transformations in its history. The result: an updated destination in its own right, with its 1787 fabric left intact.

Work has been carried out in phases and covered the reception, breakfast restaurant, meeting and event venues, fitness area, terrace, and, most recently, the Pool & Relax Area. Along the way, the hotel opened the restaurant aye aye and the cocktail bar SIR. This is complemented by the hotel’s 366 rooms and suites, which were fully renovated in 2019.

A Future-Proofed Icon

A guiding light throughout the project was not to build a new hotel, but to develop the one people have come to love. The building and its position on Copenhagen's harbor have always been central to Admiral Hotel's identity, and the project set out to build on that character while opening the building further to the city.

Food and drink are central to the new vision. The program is led by F&B Manager Kasper Glensted, who spearheads the strategic development of the hotel’s culinary universe.

 

Start the evening with open fire delicacies in restaurant aye aye, before heading over to the cocktail bar SIR.

 

At restaurant aye aye, Executive Head Chef Andreas Tancula Møller cooks over open fire, setting Nordic ingredients against Mediterranean influence. The kitchen is matched by an ambitious wine list from Wine Director Christoffer Schwarz-Nielsen, drawn from a cellar of more than 10,000 bottles. In 2025, the wine program took Gold in the Best Newcomer List category at Denmark's Star Wine List of the Year awards.

Next door at cocktail bar SIR, craftsmanship and international influences take center stage. Head of Bars Leo Lahti works classic technique against contemporary flavor. A martini trolley and guest appearances by renowned bartenders are among the experiences that underscore the bar’s international ambitions.

Our ambition has been to preserve what makes the property special while elevating the experience and creating a hotel that feels relevant both today and in the future. We now have an Admiral Hotel where history remains clearly present, yet the setting, gastronomy, and guest experience have been reimagined, says Jesper Stubgaard, Managing Director of Admiral Hotel.

Most recently, a Pool & Relax Area has opened, boasting a unique waterfront location. Here, hotel guests will find a heated outdoor pool combined with an indoor relaxation area—all overlooking the harbor and Opera House. The new space is among the latest additions to the hotel and also marks the completion of the extensive transformation.

A Team-Driven Transformation

New surroundings and concepts are just one part of the transformation. Throughout the process, colleagues from across the hotel have played a pivotal role in bringing the vision to life and creating the guest experience that defines Admiral Hotel today.

With the transformation complete, Admiral Hotel is ready for the future. Its next chapter is built on a foundation of history—but with new concepts that usher this landmark into a new era.

– A transformation of this magnitude doesn’t happen overnight—especially not while the hotel remains fully operational. At the mouth of the Sognefjord, the coming 77-room resort will open up a stretch of coastline to the world, complete with dining, meetings and wellbeing. The hotel is scheduled for completion in autumn 2027.
