All Aboard! At ‘aye aye,’ Admiral Hotel’s New Restaurant, Copenhagen’s Maritime Charm Meets Mediterranean Fire

Last week, the historic Admiral Hotel unveiled their brand new restaurant concept: aye aye. Bringing an exciting and fresh social dining concept to Copenhagen’s waterfront, aye aye combines a maritime atmosphere with a vibrant dining experience, inspired by the Mediterranean. Here, open fire and fresh ingredients take center stage.

A treasure trove of history, Admiral Hotel has long been a landmark in Copenhagen. The hotel occupies a historic building on Toldbodgade, almost castle-looking in its grandeur. The opulent building with a view of Copenhagen's harbor dates back to the 18th century, today boasting 366 newly refurbished rooms and lavish suites.

Now, the hotel is entering a new era. After months of preparation, the time has finally come to welcome the first guests to a new restaurant concept. General Manager Jesper Stubgaard is excited to introduce a new player to the Copenhagen restaurant scene: aye aye.

– We have been looking forward to this day immensely. aye aye is an essential part of the new direction for Admiral Hotel, where we aim to create a destination that appeals to both Copenhageners and international guests. Now, the day has arrived, and we are proud to invite our guests inside for an experience that blends exquisite gastronomy, a warm and welcoming atmosphere, and an ambiance unlike anywhere else, says Jesper Stubgaard, General Manager at Admiral Hotel.

Coastal Chic, Relaxed Ritzy

aye aye is meant to be a gathering place—a spot where guests can enjoy high-quality food in a relaxed and inviting setting. The kitchen favors cooking over an open fire and fresh ingredients, with inspiration coming from the flavors of the Mediterranean. At the grill, Executive Head Chef Andreas Tancula Møller has been working tirelessly to craft a menu that celebrates the best of Mediterranean cuisine with Nordic ingredients. The 30-year-old brings experience from renowned restaurants such as Søllerød Kro, Falsled Kro, Alchemist, and Restaurant Møntergade, having also won the chef competition "Sol over Gudhjem" in 2021.

– It’s an incredible feeling to finally present what we’ve been working on for so long. We have created a menu where open fire, fresh produce, and rich, flavorful sauces take the lead. aye aye is all about enjoying great food in great company, and we are excited to welcome our first guests for an evening filled with flavor, atmosphere, and excellent wines, says Andreas Tancula Møller, Executive Head Chef at aye aye.

At aye aye, wine is equally as important as food. The wine list is carefully curated, featuring an exclusive selection of outstanding wines from renowned regions and passionate small-scale producers. When it comes to interiors, the design language is inspired by classic boathouse architecture, with warm wood tones and Nordic colors that complement the stunning harbor view. 

With the opening of aye aye, Admiral Hotel also unveils the first part of its new ground floor. This includes a breakfast restaurant, meeting rooms, and the aye aye Chambre—an exclusive private dining space seating 18 guests, offering a breathtaking view of the harbor and the Opera House. Later this year, the restaurant’s terrace will open, allowing guests to dine with the waves.
